Cherry Chipotle Chili
serves 4
Ingredients
- 2 T olive oil
- 1 lb ground turkey
- 2 ea carrots, diced
- 1 ea onion, diced
- 1 T garlic, chopped
- 1 T chili powder
- 1 cn tomatoes, diced
- 2 C black cherries, pitted (fresh or frozen)
- 2 chipotle chiles in adobo, fine chop
- 2 ea bay leaves
- 1 cn white beans, cooked, drained and rinsed
- 1/4 C plain Greek yogurt
- 4 T cilantro, chopped
Instructions
- Brown the turkey in the oil, then add the carrots, onion and garlic. Continue cooking until the carrots are
softened.
- Stir in the chili powder, tomatoes, chipotles, bay leaves, and 1/2 C water and bring to a boil.
- Simmer until the chili thickens, then add the beans and cherries and heat through.
- Season to taste with the adobo sauce, plate, garnish with yogurt
